Hij nam in juli zijn intrek in een van onze productieateliers met het project om de eerste Belgische sake te produceren. Deze zal biologisch zijn, en geproduceerd worden op basis van rijst van Europese oorsprong. Laurent hecht ook veel belang aan de circulariteit van zijn project. De droesem van de sake kan op verschillende manieren geherwaardeerd worden, bijvoorbeeld door het als voedingsmiddel te verkopen.<\/p>\n<p>Al richt Laurent zich met zijn productie in de eerste plaats tot amateurs en wijnhandelaars, toch is het ook zijn bedoeling om de Brusselaars kennis te laten maken met deze alcoholdrank, die momenteel niet zo bekend is bij het grote publiek. Sake wordt vaak onterecht geassocieerd met gedistilleerde en sterke alcoholen, maar overschrijdt in werkelijkheid zelden de 15% alcohol. Het is een gefermenteerde alcohol die bestaat uit rijst, water en koji (rijstmout). Traditioneel drinkt men het zowel warm als koud, en het productieproces lijkt vrij veel op dat van bier.<\/p>\n<p>Laurent profiteert ten volle van het netwerk dat Greenbizz hem biedt. Zo nam hij \u00e9\u00e9n van de brouwers van brouwerij En Stoemelings aan, Julien Herman, om samen met hem de productie op te starten. Het productieproces is nu begonnen en de eerste batch sake is geperst en ligt te rijpen.
